In Japan, the kiritsuke is known as the master chef's knife. Use it for all the tasks for which you'd use a chef's knife. It works extremely well with vegetables; julienne, dice, or brunoise with ease. It's also an excellent choice for cleaning and portioning boneless proteins, and particularly fish. It slices cooked proteins with grace and ease. With its straighter edge, it's ideal for slicing cuts and push cuts. Beauty and performance come together in the Shun Kaji series. They feature an SG2 micro carbide steel cutting core made of ultra-fine-grained steel. This enables Shun to make thinner blades that can be sharpened to an extremely sharp 16° angle. At the same time, SG2 offers unmatched edge retention, so it is superb for kitchen use. Due to this combination of performance and durability, SG2 is considered by many to be the world’s best blade steel for use in kitchen knives. The elegant styling of the Shun Kaji series is a fusion of the best of Japanese and European design.

  • Ultra-premium SG2 micro carbide steel cutting core offers the highest level of performance; dense grain structure enables it to take and hold a fine edge with unparalleled durability
  • 65-layer construction; 64 layers of nickel silver/stainless steel Damascus surround the SG2 cutting core, add beauty, and help food release from the blade
  • 16° double-bevel blade provides razor-sharp performance
  • Ebony finish, contoured PakkaWood handle offers comfort and control, resists moisture
  • Steel endcap, embossed with the Shun logo, adds a graceful touch, enhances balance
  • Handcrafted in Japan
